Cruickshank selected this among her top six picks for its fearless savouriness. “Blackberries singed on the barbecue, barely-ripe strawberries and salty kalamata olives – then this whole wave of smoke and char rolling in behind them,” she noted. “The nose is super savoury and a little wild, and the palate leans even harder into a gamey territory: kangaroo tartare, cured meat, cracked pepper, with a cool little hit of mint lifting it at the end. There’s enough tangy raspberry underneath to stop it feeling too heavy or too funky, which is what makes it so compelling. Kinda weird, very smoky, very savoury – and honestly just very cool.”
